Recipe for Turkish Cheesecake
Decorate this cheesecake simply with toasted hazelnuts or elevate it with rose petals, pomegranate seeds, and various nuts.
Ingredients:
(Serving size: 8 / For: 1 cheesecake)
Crust:
30 grams sunflower seeds
40 grams strawberry jam
200 grams digestive biscuits
80 grams butter
Filling:
700 grams cream cheese
100 grams powdered sugar
250 grams heavy cream
Gelatin:
6 gelatin leaves
50 grams water
Juice of 1 lemon
Decoration:
100 grams strawberries
100 grams Turkish delight
Juice of 1 lemon
Instructions:
Step 1/9
Melt butter until liquid. Allow butter and cream cheese to soften at room temperature.
Squeeze a lemon to extract lemon juice.
Soak gelatin in cold water for 5 minutes.

Attach the food processor blade.
Grease and line a square baking tray with parchment paper.
Preheat the oven to 180°C (356°F).
Step 3/9
Place sunflower seeds and toasted hazelnuts into the food processor. Secure the lid tightly and pulse until finely ground.
Add digestive biscuits to the food processor. Continue pulsing until the mixture resembles coarse crumbs.
With the processor running, add butter. Continue processing until the mixture is well combined.
Transfer the mixture to the prepared baking tray. Press firmly to create an even and compact base. Bake for 10 minutes at 180°C (356°F).

Place strawberries, Turkish delight, lemon juice, and water into the food processor. Pulse until smooth.
Strain the juice into a separate container and set aside.

Clean the food processor bowl and attach the double whisk attachment. Place cream cheese and powdered sugar into the food processor. Beat until smooth and creamy.
Add heavy cream to the food processor. Beat until the mixture thickens.

Place gelatin and water into a small bowl. Microwave in 20-second intervals until gelatin dissolves.
Step 7/9
Add 1/3 of the gelatin mixture to the strawberry juice.
Add the remaining gelatin mixture to the cream mixture. Add lemon juice and stir until well combined.
Step 8/9
Pour the cream mixture over the baked crust. Sprinkle evenly with Turkish delight.
Pour the remaining strawberry juice over the cheesecake.
Chill in the refrigerator for 4 hours.
