Russian Tea Cakes Recipe
Russian tea cakes, also known as "Russian Tea Cakes" or "Snowball Cookies" in English, are beautiful small cakes made from flour, sugar and ground cashews.
The cake has a small spherical shape, covered with fine powdered sugar and is often added with cashews or chestnuts to add flavor. The cake has a nutty taste from cashew nuts and a light sweetness from the powdered sugar layer, often popular at parties and festivals in many countries around the world.

Ingredients:
- 1 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 6 tablespoons powdered sugar
- 1 cup finely chopped chestnuts
- ⅓ cup powdered sugar, or more if needed
Instructions:
- Preheat oven to 350 degrees F (175 degrees C).
- Cream butter and vanilla in a medium bowl with an electric mixer until smooth, 2 to 3 minutes.
- Mix flour and 6 tablespoons of powdered sugar in a separate bowl. Add to butter mixture and stir until just mixed. Add walnuts and mix until combined; The mixture may be a bit dry and rough.
- Take small scoops of dough and roll between hands into 1-inch balls. Place balls 2 inches apart on cookie sheets, no need to grease the liners.
- Bake in the preheated oven until edges turn golden, about 12 minutes.
- Remove from oven and transfer to wire rack to cool for 15 minutes.
- Place remaining 1/3 cup powdered sugar in a small bowl. Roll cooled cookies in powdered sugar once or twice to create finished balls. Enjoy!
